The Farm / Our Wines

Nothing can be said of the history of Chianti without its main protagonist, Sangiovese. At the same time, developments in viticulture and enology, allow us to proudly demonstrate how the subzone of the Chianti Rufina is an excellent territory for other grape varietals such as Merlot. Under our care, Merlot is capable of fully expressing all of its elegance.

Castello del Trebbio’s wines are the manifestation of two souls: A continuation of great tradition on one hand and the new potential of this territory on the other.

Along with our traditional Sangiovese based wines, such as our Chianti DOCG, and our Chianti Rufina Riserva “Lastricato,” we produce another line of wines sold under our “Vigneti Trebbio” label. These modern concept wines are created from grape varietals new to the area. With great care and professional handling in the vineyards and cellars, these new varietals have found a new chosen land in the Chianti Rufina.

We also offer three wines, which through their names, share an essential connection with the Castle’s rich history. The first, Pazzesco, is  the outcome of a blend between Merlot and Syrah and is now an” institution” at the Castle. Next comes Congiura, an excellent white wine made from the union of Riesling and Pinot Grigio. The last one is called De 'Pazzi, a blend of Sangiovese, Merlot and Syrah, which achieves unique characteristics during its refinement in amphorae (large terra cotta vessels)

Completing our spectrum of wines are the dessert wine Vin Santo, an ancient tradition and DOC from Chianti, and a great sparkling wine produced in the Classic Method, a Brut produced from Chardonnay and Trebbiano.

All our wines age in traditional, large oak casks. Lastricato and Pazzesco additionally spend some months in smaller and medium barriques and tonneaux before bottle aging for at least six months.
